Do you know what I would LOVE? I think it would be just awesome if someone (all of you!) left comments on easy ideas for suppr/dinner. With homeschooling... it would be great to 'fix it and forget it'. I never know what to make. Crockpot favorites anyone? Yummy, scrummy and easy, smeezy is the word. ;) I would be forever grateful...
 
 
We made this the other night (Jeff's idea) to go with our coffee. Yum!!

1 1/4 cup sugar
1 cup oil
2 eggs
1 cup buttermilk
2 cups flour
1/2 tsp salt
1/2 tsp soda
1 tsp baking powder

CINN. MIXTURE
4 T sugar and 1 tsp cinnamon

Mix well. Grease a 9x13 pan. Pour HALF batter in, then 1/2 cinn. mixture. Repeat, last of batter and then remaining cinn. mixture on top.

Bake at 350* for 20 -25 min. poke holes in with toothpick then GLAZE 
Glaze: mix 1 cup powdered sugar, 1/2 tsp vanilla and just a bit of hot water.

Enjoy with a cup of coffee!!
 
 
Oh how I love these beautiful fall days. Oh how I love baking with pumpkin. :) And here is a favorite. It is GOOD, quick, and simple. I got this recipe from Jeff's sister, Joseca. 

1 15oz can pumpkin
1 12oz can evaporated milk
1 1/2 cups sugar
4 eggs
1/4 tsp cloves
1/4 tsp nutmeg
1/4 tsp ginger
1/2 tsp cinnamon
1/2 cup buttermilk (or milk with a little vineger added)
{1} mix ingrediants all together
{2} pour into greased 9x13
{3} sprinkle one box SPICE CAKE MIX over top and pat down lightly
{4} melt one stick of BUTTER and drizzle over top
{5} bake at 350* for 40-45 min.
{6} smooth crumbles over with spoon and cover thickly with COOL WHIP
